Pink peppercorns - the pepper that  isn't. Pink peppercorns are actually a type of berry from the shrub known as the Peruvian Peppertree. While not related to pepper they do resemble pepper and have a peppery flavour. But they are also sweet and fruity. Pink peppercorns can be used to enhance the flavours of citrus fruits, strawberries, pineapple, and pomegranate, as well as dairy foods like butter and cream, and even bacon, beef, chicken and white fish.

The pinene in Pink Peppercorns gives them a strong aroma of pine and citrus, with herby, floral and citric flavours. Distilled, they would adds a piquant peppery bite to gin.

 

WARNING: Pink peppercorns are actually a member of the cashew family, which means anyone with a cashew allergy would be better off avoiding them.
